Chook Fest: Roast Chicken Thighs in a Ginger Honey Soy Mustard Glaze

I haven't done Chook Fest in a while and to tell you the truth, I have something chicken in my fridge every week. I guess I've gone a bit boring these days and stuck to poached chicken, which I adore. But last weekend, I wanted something else. Something quick and flavorful. Of course, I had to work with what I have on had as always. So I grated some ginger (about 1/2 inch), 2 tablespoons soy sauce, 1 teaspoon honey and 1 teaspoon dijon mustard - all of that equals something awesome. I loved the chicken-y sauce that came after roasting the chicken thighs in the oven (at 180C for 15-20 minutes until the juices run clear).
