Chook Fest: Slow Cooked Dry Rub Chicken

I love this recipe from Smitten Kitchen. As always, I didn't follow it to the letter and I added some thyme. After slow cooking for 2 hrs, it has the most delectable scent and flavor. If you enjoy sweet and savory tastes at the same time, this is definitely worth a shot.

Ingredients for the Dry Rub:

6 tablespoons brown sugar
4 tablespoons smoked paprika
2 tablespoons cumin
2 tablespoons chili powder
1 tablespoon garlic powder

2 chicken marylands

Method:

Preheat the oven to 125C. Mix the ingredients for all the rub and add the chicken pieces. Make sure that the rub is covered all over the chicken. Place on a baking sheet lined with foil. Cover this up with more foil. Bake for 2 hrs. Once cooked, transfer the cooked chicken pieces to a plate. Pour the sauce into a saucepan. Add some of the leftover dry rub if any is left and some salt to taste. Boil further until it's syrupy. Drizzle over the chicken pieces. Serve with roasted potatoes or in my case, I made a rice dish mixed with sauteed red onions, carrots and zucchini. Enjoy!
