An Easy Lunch: Lamb Loin Roast and A Healthier Banana Bread

I almost feel guilty about posting this but I simply couldn't resist. Something this delicious should not be left unsaid, especially if literally took no effort to make.

I got this piece of marinated lamb loin from the nearby butcher. Put it in a 180C oven for 30 mins and it was cooked perfectly. It's already tied and This could easily serve 3 people.



I also made another version of the previous Lemony Banana Cake from 101 Cookbooks, omitting the lemon zest. A healthier version too. I added 2 tsp acai powder, 2 tbsp chia seeds, then instead of 1 cup of choc chips, I only used 1/4 cup and added 1/4 cup of dried cranberries. Enjoying now with lemongrass and ginger tea...mmm...
