Spelt Twists Salad with Tuna and Tahini Lemon Dressing

I love this salad. It has a creamy dressing that is satisfying...and there's no mayonnaise or cream used!

For the tahini lemon dressing - I used 1/3 cup tahini, 1/3 cup yogurt, about 1/4 cup olive oil, zest and juice of 1 lemon.

The salad is just a matter of mixing cooked spelt twists, cherry tomatoes, chopped parsley, canned tuna and a can of borlotti beans. Everything I used is organic.
