Roasted Stuffed Tomatoes with Quinoa, Tuna and Ricotta

I'm just making the most of my leftover quinoa, so I added in a tin of tuna flakes.
I scooped out the insides of 3 organic tomatoes and spooned this mixture into them.
Topped these stuffed tomatoes with ricotta and bake for 15-20mins in the oven or longer for mushier tomatoes.
