Dorie Greenspan's Almost Fudge Gateau

I love Dorie Greenspan's cookbooks. The instructions are clear as if reading a novel, as opposed to just step-by-step. Dorie has a way of putting herself into the shoes of someone who has no experience in baking at all. Following her instructions is like having her hold your hand and guiding you through it. I've made so many recipes from her book, Baking, and everything is always perfect.
