Easter Eating: Jamie Oliver's Peach Pudding

While the duck was roasting in the oven, we were watching The Naked Chef make peach pudding. Having bought nectarines the other day, I knew that I had to do something about them (aside from just waiting for them to be ripe enough to eat).


The recipe is so easy, even a kid could make it - 125g each of self raising flour, sugar, butter and 2 eggs. Unpit 6 nectarines, 3 tablespoons of sugar and water in a pan and cook for 5 mins, until syrupy. Pour in a baking pan (I used a brownie pan) and spread the cake batter on top. Cook in a 180C oven for 45 mins. Mine only took 30mins.
