Easter Eating: First Roast Duck

Simple home cooking at its best! With a straightforward procedure, you're 2 hrs and 30 mins away from a perfectly cooked roast duck.

Score the duck skin and pour hot water over the duck. Discard the water. Pat the duck dry and place in the refrigerator for 1 hour or more. When ready to cook, place the duck on a rack and season generously with salt. Cook in a 180C oven for 90mins.

Remember to pour off and duck fat for some roast potatoes.
