SAZL Sweats: Roasted Chilli Chicken Legs

I'm gonna be honest and say that being a bum is great. But I know it's not going to last forever. These past few months, I've been so insane about not doing anything - being unemployed and all. My family has been very encouraging, thanks to them. Their advise is to do the things that I've been wanting to do before that I wasn't able to because I was too busy working. And what else is out there for me to do? I enjoy eating and cooking. Nothing fancy or too difficult but tasty and easy.

One of the things that I wasn't able to do while I was in Manila was to make roast chicken for my mom. Our oven at home broke down (surprise, surprise!). I still think back on the countless roast chicken related disasters that happened at home - raw chicken, half cooked chicken, burnt chicken, flavorless, tasteless - you name it! Until I discovered Kylie Kwong's Radical Chicken recipe. I have to say, it changed my life. Knowing that I'd be able to make a perfectly cooked roast chicken anytime is liberating. At least I can say that I'm good at something. So...this is a repeat of my roasted chicken recipe, only that the flavor is different - chilli flakes, salt, pepper and olive oil. So simple, so delicious. Here's to you, Mom.

I also made a salad with truss tomatoes and fiordilatte, with olive oil, some dried herbs, salt and pepper.
