Chook Fest: Cheat's Chicken Parma

This chicken parma is extremely easy to make with very few ingredients. The result is quite satisfying and comforting. I had the smallest piece of chicken breast from the batch and added a simple salad with tahini yogurt dressing. After my meal, I sliced up the rest of the chicken to take to work this week.










The ingredients for the chicken parma are - 2 chicken breasts, 1 egg, panko crumbs (enough to coat the chicken breasts), salsa or tomato sauce of your choice (pasta sauce will work well too) and shredded cheddar cheese.

Before you start cooking, preheat the oven to 200C. First, coat the chicken breasts with egg then the crumbs and pan fry until golden brown. Don't worry about them not getting cooked at this point, they will be cooked in the oven later.

Then place them on a baking tray lined with baking paper or foil. Spoon some salsa or tomato sauce over the chicken then top with shredded cheese. Place in the oven to cook for 15mins or until the cheese is melted and bubbly.

Cool for a few minutes and serve warm!


For the salad dressing, I used tahini, yogurt, miso paste, soy sauce and garlic. I didn't use any oil in the dressing. The dressing is a bit dense but it should be enough to coat all the salad leaves.
