My Test Kitchen: Apple and Coconut Family Cake

This is a very easy cake to make. No need to cream the butter, almost a one bowl cake mixture.

What I changed from Dorie's recipe:

  • I only used 2 apples and left their skins on. I didn't bother with slicing up an apple and decorating the top (lazy). 
  • I used wholemeal spelt flour. 
  • Instead of rum, I used Cointreau.
  • I used olive oil because I like the taste instead of a flavorless one.
