I've been thinking of ways of cooking with and eating quinoa. I still haven't finished my first batch. I want to make something easy and tasty. If you're a fan of quiches, this recipe will surely be a nice addition to your weekly meals. All the ingredients in this recipe is organic.
Ingredients:
- 1 1/2 cup cooked quinoa
- 1/2 cup blanced spinach
- 1/2 chopped and cooked onion
- 2 cloves chopped garlic
- 1 tsp smoked paprika
- 1 tsp dried parsley
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp ground black pepper
- 3 eggs
- 3 tbsp ricotta
Procedure:
Preheat your oven to 180C.
Saute #3 to #9 in a small frying pan with some olive oil until the onions are browned and fragrant.
Place this mixture into a bowl to cool. Add the blanched spinach and cooked quinoa. Mix well.
In a small bowl, whisk the eggs and ricotta together. You can add more salt if you like.
Place the quinoa mixture into a baking dish and pour in the egg mixture. Mix well.
Bake for 30-45 minutes.
