Quick Breakfast: Egg Salad on Toast

Egg salad. Just that name seems to take me back to my grandma's kitchen. She used to make egg salad the night before to put into our sandwiches for school snacks the next day. The egg salad is extremely simple to make - it just has 2 ingredients - egg and mayonnaise.

My version is amplified - with apple cider vinegar, parsley and smoked paprika. I ate this the other day with a couple of slices of cape seed loaf. Yum!
